Traditional Indian Recipe - Khichdi
Khichdi is a simple yet nourishing dish made from rice and lentils, cooked together with aromatic spices.
Ingredients:
- 1/2 cup rice
- 1/2 cup yellow lentils (moong dal)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon ghee (clarified butter)
- Fresh coriander leaves for garnish
Instructions:
1. Rinse the rice and lentils thoroughly and soak them in water for 30 minutes.
2. Heat ghee in a pressure cooker and add chopped onions. Saute until onions turn translucent.
3. Add ginger-garlic paste and chopped tomatoes. Cook until tomatoes are soft and mushy.
4. Add turmeric powder and salt. Mix well.
5. Drain the soaked rice and lentils and add them to the pressure cooker. Add 3 cups of water and mix everything together.
6. Pressure cook for 3-4 whistles until rice and lentils are cooked through.
7. Once the pressure releases, open the cooker and give the khichdi a gentle stir.
8. Garnish with freshly chopped coriander leaves and serve hot with a dollop of ghee.
